This is such an easy and delicious way to make them, and I love how versatile they are. They can be tossed into pasta, layered onto a sandwich, added to a stir-fry, or served as a quick and flavorful side dish alongside your favorite protein (our family loves them with baked chicken thighs!)
And did I mention this lion’s mane mushroom recipe only requires 4 ingredients? Yep! Lion’s mane, butter, sea salt, and soy sauce are all you need to make these tender, slightly meaty, melt-in-your-mouth mushrooms in minutes.
It’s one of those low-effort recipes that makes healthy eating feel so easy. And fair warning, you might be tempted to eat the whole pan straight from the stove… but who could blame you 😉.

Curious About Lion’s Mane Mushrooms?
When I first spotted lion’s mane mushrooms at the grocery store, I was just as curious as you might be now. They’re definitely not your average mushroom!

- What exactly are lion’s mane mushrooms? Good question!
Lion’s mane mushrooms are large, white, shaggy mushrooms that (as the name suggests) look a bit like a lion’s mane. You might also hear them called hedgehog mushrooms, pom-pom mushrooms, or bearded-tooth mushrooms. They grow naturally in North America, Europe, and Asia. - Where to buy them? You can often find lion’s mane mushrooms at a well-stocked grocery store or your local farmers’ markets. While I haven’t tried this myself, they are supposedly pretty easy to grow as well, and you can order a homegrown kit right on Amazon, if you want to grow them at home.
- Are they healthy? Yes, they are known for their ability to boost brain health. They are said to protect against Alzheimer’s disease and dementia, while also reducing mild symptoms of anxiety and depression. In addition, they may help to support focus, cognition, creativity, and productivity!
- What do they taste like? They have a mild, slightly sweet, earthy flavor and “meaty” texture when cooked. A lot of people say they taste like seafood, especially crab, which makes them a great plant-based option for all kinds of dishes.

Let me show you how to make this recipe!
Before you start cooking, clean and slice the mushrooms. Brush off any dirt or debris. Cut off the bottoms, then slice them into 1/4 to 1/2-inch pieces. Depending on how you plan to serve these mushrooms, you can cut them into thinner or thicker slices. Just be sure to adjust the cooking time accordingly.



Serving suggestions
Lion’s mane mushrooms are delicious straight out of the pan or as a simple vegetable side dish! Serve them with your favorite protein source (hello cast-iron salmon!) and enjoy. Or, have some fun and try one of these ideas:
- Spooned over high-protein cottage cheese scrambled eggs (or in an omelet!)
- Served on some sourdough bread with a bit of spicy mayo
- On top of your favorite potato! I love them over a freshly baked sweet potato; it’s the perfect sweet and savory flavor bomb
- Over your favorite grain or brown rice pasta. I can tell you for sure, they are a delicious addition to my creamy alfredo pasta made with cottage cheese. Insanely good!
A few notes on storing your mushrooms
Once you get the lion’s mane home, you want to store them in a bag. I recommend using a paper bag so your mushrooms can breathe. They will last up to five days when stored this way in the fridge. I always keep them right in my veggie drawer.
Cooked mushrooms are best eaten right away. However, if you do have leftovers, store them in an airtight container and pop them in the fridge. They will last up to three days like this.

Ingredients
- 8 ounces lion’s mane mushrooms
- 1-2 tablespoons butter or extra virgin olive oil
- 1/2 tablespoon soy sauce
- Sea salt to taste
Instructions
- Cut off the bottoms of the mushrooms, then slice them into 1/4-1/2 inch pieces.
- In a dry, medium skillet over medium-high heat, cook the mushrooms for a couple of minutes on each side. The excess water will evaporate and mushrooms will reduce in size a bit.
- Add the butter and cook until browned, about 2 minutes. Flip and cook the mushrooms for another 2 minutes or until golden brown on each side.
- Add soy sauce and salt, enjoy!

There’s a farmers market here in Long Beach, California at the marina on Saturdays where a local mushroom grower sells it by the pound. I got a large 2 pound lion’s mane for $25.

Gently brush off any loose dirt with a soft brush or damp paper towel. If they are very dirty, you can briefly rinse them under cold water, but try not to immerse them in water becasue they are super absorbent (like most mushrooms!).
