This is one of the easiest (and most refreshing) summer salads you will ever make.
It only takes 10 minutes to prepare and makes a perfect companion to just about anything you are throwing on the grill, so it’s a great recipe to have on hand for impromptu summer gatherings.
I especially like serving it with grilled chicken or turkey burgers and it’s also a great partner for some grilled salmon.

Ingredients
- 1 cucumber seeded and thinly sliced
- 1/2 white onion sliced into half moons
- 1/2 tsp. salt
- 2 tbsp. chopped dill
- 1/4 cup 2% Greek yogurt
Instructions
- Combine all ingredients into a large bowl. Adjust seasonings as needed. Serve and enjoy!!

I had to leave out the onion due to allergies to it. I also add a teaspoon of lemongrass! It was great! My co-workers has been asking me to make it again!
