Minty Pea Quinoa Salad
- 1 cupCOOKED quinoa
- 1 cup of frozen peas
- 1/4 cup chopped mint
- 2 tbsp chopped scallions
- Juice + zest of 1/2 a lemon
- Salt and pepper to taste
- Combine all ingredients in a large bowl, mix well. Serve and enjoy.
