Ingredients
- 1 cup cooked quinoa
- 1 cup diced tomatoes
- 1 clove crushed garlic
- 1/3 cup feta cheese crumbles
- 1/4 fresh cut basil
- salt and pepper to taste
Instructions
- Combine everything in a large bowl, mix well. Serve and enjoy.

I am definitely going to try the tomato basil and feta cheese quinoa salad! That looks delicious. If I was going to put some kind of dressing on it, what would you suggest? Something light that would go with the flavors in the salad?

I love quinoa – I use it in place of rice a lot lately. This is such a colorful dish – simple and delicious. And I remember those outdoor drive-ins … it’s been a while! Retro for sure!

Absolute loved the salad, my only question is when I log it into my fitness pal, it comes up 400 calories, after printing out the recipe to make it, it shows 187 per cup. Why the difference?

Are you sure that you logged it as cooked quinoa and not raw? That may be the problem?

Too much garlic! Definitely try a small amount to start, then increase you you think it needs more! … Otherwise, this was a good recipe! Love that it is only 5 ingredients!

Just made this! It was so good! The quinoa mixed perfectly with the tomato, and I added balsamic with the garlic to make a sauce.
