Hey guys… it’s been a while, I know!  While our move back east began nearly three months we have only been in our new house (she was a fixer-upper) for the last 10 days.

It’s been: awesome, exciting, exhausting, overwhelming, and all encompassing.

But the end results are proving to be worth every ounce of blood, sweat, and chardonnay.

I hope to be back in front of the camera by the end of the month (give or take) sharing some of my favorite Clean & Delicious recipes with you but in the meantime I wanted to share this with you.

This is a video my hubbie and I produced for the 2013 Body Computing Conference (yes! It’s our 1st video shot in our new kitchen – we have few kinks to work out but all in all things went well).

The University of Southern California’s Center for Body Computing is
 a digital health innovation and research center; their founder, Dr. Leslie Saxon and her team believe technology can be used to help people live longer and stronger lives.

Dr. Saxon reached out to us to help create a video that could provide simple, everyday, meal ideas for people with Diabetes.

Being that there is a history of both type 1 and 2 Diabetes in my family, I was really excited to be a part of this creative process.  And I know from the many emails and comments I get from you guys that some of you are either diabetic or have family members who are diabetic so I hope this video speaks to you and can help provide you with some simple, delicious, everyday meal solutions.

    Hi Dani! Your kitchen looks great – what a nice space to cook in. I love many of your recipes and use them over and over. I really appreciate the education I am getting from you about how to cook so many different vegetables I wouldn’t have approached before. I also keep cooked brown rice in portion servings in the freezer now and I am going to try today’s recipe for lunch. You are helping me a lot. Thanks for doing what you’re doing.

    Hi Dani – Great idea to cook the brown rice ahead of time and freeze it…makes it so convenient! Can you tell me about the coconut oil you are using? I’ve never used it before. Thanks!

    Hi Dani.. Your brown rice video was fantastic and all on my food plan. Love rice, love beans, ready for the breakfast recipe. Rice is also ready in the fridge and the freezer. Thanks for the tips.

      It’s a mixture of Greek yogurt and chili garlic sauce – it’s delish!

    These recipes look amazing! The only thing I’m not too sure about is why you would add a spoon of coconut fat to the lunch item. Does it improve the flavor or is there a nutritional kick? Just curious. :)

    I wanted to know if I could substitute quinoa instead of brown rice. Would it work?
