Kale is a a staple on my weekly menu.
Whether or not I have a plan, (usually not) it always ends up in my grocery basket and prepped for the week so I have a super nutritious, dark leafy green, at my finger tips, ready to go. More times than not it turns into some kind of kale salad.
This particular salad was inspired my by little girl, Katie (there she is adorned in one of her many princess dresses – she loves them all).
Katie loves to be in the kitchen with me. And I love having her there.
She’s always wanting to get her hands dirty and often asks me if she can make something ‘Clean+Delicious’.
Now what she means by that is, will I give her a bunch of ingredients and a bowl so she can mix it all together, make a mess, while pretending to talk to her make-believe audience (which I guess is exactly what I’m usually doing).
But, I must admit, it’s pretty cute.
Anyhow, on one particular day, I was chopping kale and asked her if she would make the dressing for the salad. Much to my surprise, ingredient after ingredient, she had a basic vinaigrette down pat. And it was 100% her idea to add the pomegranate seeds into the dressing, which her Mom just so happened to think was brilliant.
Let’s keep things in perspective here, I did encourage her to skip the ketchup and the soy sauce she wanted to add, but other than that this recipe is all Katie’s.
It’s so simple and so delicious. The chopped onion with the pop of the pomegranate truly makes for a party in your mouth.
Try serving this along side a nice big bowl of soup or with a simple roasted chicken. It’s also great on it’s own should you be in the mood for a super delicious and nutritious light dinner.
