Healthy Shredded Cabbage & Potato Soup

Healthy shredded cabbage and potato soup is an easy, comforting meal made with a handful of nutritious ingredients. This is a simple, low-calorie recipe that is perfect for a healthy diet. Serve this topped with Parmesan cheese and extra black pepper!

Ingredients

  • 1 tablespoon extra virgin olive oil
  • 1 onion, diced, (about 2 cups)
  • 2 stalks celery, thinly sliced
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • 1 -15 ounce can crushed tomatoes
  • 2 cups chicken bone broth
  • 5 cups water
  • 1 medium cabbage, thinly sliced (10-12 cups)
  • 1 pound baby potatoes, cut into bite sized pieces
  • Salt and pepper to taste
  • Parmesan cheese to serve

Instructions

  • Heat olive oil in a heavy pot over medium high heat. Once the oil is hot, add in the onions and celery. Give it a pinch of salt and saut for 5 minutes or until the onions are beginning to look translucent.

  • Stir in coriander, smoked paprika, and oregano before adding in the crushed tomatoes. Stir well and cook for 2 minutes.
  • Add the cabbage, salt, pepper, broth, and water. Stir well, turn up the heat, and bring to a boil. Then reduce the heat and simmer for 10 minutes, stirring occasionally.
  • Add in potatoes, and simmer for another 15 minutes or until the potatoes and cabbage are tender. Adjust seasonings as desired.
  • Ladle into your favorite bowl and serve with a hearty sprinkle of Parmesan cheese and a sprinkle of black pepper. Enjoy.

Notes

Note: You can swap diced tomatoes for crushed tomatoes if you have them on hand. Try adding an extra layer of flavor by using fire-roasted tomatoes or tomatoes with basil.
Both savoy cabbage and green cabbage work really well in this recipe.
