Slow Cooker Beef Tips with Onion and Jalapeño

This makes a great head start protein for the week. Double it up if doing meal prep!

Ingredients

  • 2 pounds stew meat beef tips
  • 5 cloves garlic peeled
  • 1/2 onion sliced into quarter moons
  • 1/4 cup pickled jalapeños
  • 1/4 cup ranch dressing I used primal kitchen
  • 1/2 cup salsa
  • Salt and pepper to taste

Instructions

  • Pat meat dry and season with salt and pepper.

  • Heat olive oil or ghee in a heavy pot, like an enameled Dutch oven. Add the seasoned beef and brown on both sides, remove and repeat with more oil or ghee and beef.

  • Transfer meat to a slow cooker and add garlic, onion, jalapeños, ranch and salsa.

  • Cook on low for 4-6 hours. Serve and enjoy!

Notes

Make this on Sunday and have shredded beef to use in tacos, salads, stuffed in sweet potatoes or in quesadillas!
  • In the refrigerator: Transfer shredded beef to an airtight container and place in the fridge for up to about 5 days.
  • Freezer: Add to a large freezer-safe bag or storage container and store in the freezer for up to about 3 months.
