- 1/4 cup balsamic vinegar
- 1 tablespoon extra virgin olive oil
- 1 tasblespoon honey (or maple syrup)
- 1 clove garlic, crushed
- 1/2 teaspoon Dijon mustard
- salt and pepper to taste
In a small bowl, whisk together the Greek yogurt, balsamic vinegar, olive oil, honey (or maple syrup), minced garlic, and Dijon mustard until well combined.
Season with salt and pepper to taste. Adjust the sweetness or tanginess by adding more honey or balsamic vinegar if desired.
Transfer the dressing to a jar or airtight container and refrigerate for at least 30 minutes to allow the flavors to meld together. Give the dressing a good shake before using it on your salads or as a dip for vegetables.
- Swap the yogurt for non-fat or full-fat if preferred! All types of plain Greek yogurt will work.
- Adjust seasonings as you go. You can add extra vinegar for more pop, honey for more roundness, or extra garlic for more zest. Make it work for you.
- Chill the dressing before serving if you like your dressing extra thick! It also makes a great dip.
