Ingredients

  • 1 cupCOOKED quinoa
  • 1 cup of frozen peas
  • 1/4 cup chopped mint
  • 2 tbsp chopped scallions
  • Juice + zest of 1/2 a lemon
  • Salt and pepper to taste

Instructions

  • Combine all ingredients in a large bowl, mix well. Serve and enjoy.
