Quinoa Spinach + Mango Bowl

Ingredients

  • 2 big handfuls baby spinach chopped
  • 1 clove garlic crushed
  • 1/2 cup COOKED quinoa
  • 1/3 cup chopped yellow pepper
  • 1/3 cup chopped mango
  • Juice from 1/2 lime
  • salt and pepper to taste

Instructions

  • Combine baby spinach, garlic, quinoa, pepper, and mango in a medium bowl. Top with lime juice, salt and pepper. Gently toss and enjoy!
