Ingredients

  • 1 tablespoon olive oil
  • 1 yellow onion chopped
  • 1 leek white and light green parts thinly sliced
  • 2 medium carrots peeled and diced
  • 2 ribs celery diced
  • 2 cloves garlic finely chopped
  • 2 cups pearled farro rinsed and drained
  • 6 cups low sodium organic chicken stock
  • 2 cups peeled butternut squash cut into 1/2 inch cubes
  • 1 14-ounce can diced tomatoes, with the juices
  • 2 inch Parmesan cheese rind
  • 1 bay leaf
  • 1 teaspoon dried thyme
  • 1 teaspoon salt or to taste
  • 1/2 teaspoon black pepper or to taste
  • 1 bunch of kale stemmed and chopped
  • Fresh Parmesan cheese
