No-Cook Tomato Sauce

Ingredients

  • 4 scallions white and pale green portions roughly chopped
  • 4 cloves garlic crushed
  • 1 pint of cherry tomatoes halved
  • 10 basil leaves
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  • Place all of the ingredients in a food processor and pulse just until everything is roughly chopped. Be careful not to puree the mixture!
  • Adjust seasonings and enjoy!
  • Makes 4 servings (about 1/3 cup each).
