Easy Chicken Waldorf Salad with Greek Yogurt

- 1/2 cup low-fat, Greek yogurt
- 2 tablespoons mayonaisse
- 1 tablespoon lemon juice
- 1/2 tablespoon honey
- 2 cups cooked chicken breast (340 grams or 12 ounces), chopped
- 1 medium apple (about 1 cup or 125 grams), chopped
- 1 stalk of celery (about 1/2 cup or 50 grams), cut into small pieces
- 1 cup of red seedless grapes (150 grams), cut in half
- 2 tablespoons chopped walnuts
- 3 tablespoons fresh chopped chives, thinly sliced
- 2 tablespoons finely chopped parsley
- 1/2 teaspoon sea salt
- 1/4 teaspoon black pepper
- 1 head butter lettuce, leaves separated
In a small bowl, stir together the Greek yogurt, mayonnaise, lemon juice, and honey, Set aside.
In a large bowl, add the chicken, apples, celery, grapes, walnuts, chives, parsley, salt, pepper.
Pour the dressing over the chicken salad and stir it all together until everything is evenly coated.
Serve with butter lettuce cups and enjoy!
