Easy Chicken Waldorf Salad with Greek Yogurt

Ingredients

  • 1/2 cup low-fat, Greek yogurt
  • 2 tablespoons mayonaisse
  • 1 tablespoon lemon juice
  • 1/2 tablespoon honey
  • 2 cups cooked chicken breast (340 grams or 12 ounces), chopped
  • 1 medium apple (about 1 cup or 125 grams), chopped
  • 1 stalk of celery (about 1/2 cup or 50 grams), cut into small pieces
  • 1 cup of red seedless grapes (150 grams), cut in half
  • 2 tablespoons chopped walnuts
  • 3 tablespoons fresh chopped chives, thinly sliced
  • 2 tablespoons finely chopped parsley
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon black pepper
  • 1 head butter lettuce, leaves separated

Instructions

  • In a small bowl, stir together the Greek yogurt, mayonnaise, lemon juice, and honey, Set aside.
  • In a large bowl, add the chicken, apples, celery, grapes, walnuts, chives, parsley, salt, pepper.
  • Pour the dressing over the chicken salad and stir it all together until everything is evenly coated.
  • Serve with butter lettuce cups and enjoy!
