Cucumber + Mint Lemonade

  • 2 cups fresh squeezed lemon juice
  • 2 English cucumbers roughly chopped
  • 1.5 cups fresh mint leaves
  • 3/4 cup honey
  • 4 cups filtered water


  • Combine lemon juice, cucumbers, mint leaves, and honey in a blender and blend for one minute or until everything is well combined.
  • Strain lemonade through a fine mesh strainer and discard the remains. Add filtered water to the lemonade and pop in the fridge until you are ready to enjoy.
  • Makes 8-10 cups.
