Ingredients

chopped kale

hearts of romaine
finely chopped

chopped persian cucumbers

chopped sugar snap peas

chopped fennel

frozen peas
defrosted

chopped pistachios

cup
extra virgin olive oil
1/4
cup
lemon juice

apple cider vinegar

finely diced onion

crushed garlic
salt and pepper to taste
Instructions
Combine all veggies and the pistachios in a large bowl.
Pour the dressing over the top and gently toss together until everything is mixed well. Top with lemon zest and enjoy.
