Rotisserie Chicken Salad

This salad is delicious on your favorite bread or wrapped up in lettuce cups for a light lunch.

Ingredients

  • 2 heaping cup rotisserie chicken skin removed and chopped
  • 1/3 cup finely diced celery
  • 1/3 cup diced radish
  • 1/3 cup finely diced red onion
  • big handful baby spinach chopped
  • 1/4 cup tablespoons mayonnaise
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper

Instructions

  • Combine all of the ingredients in a big bowl and stir until everything is well combined. Enjoy!

Notes

 
You can also make this salad with baked chicken breasts.  This is my go-to recipe when I want to make them from scratch.
