Banana Oat Muffins

Ingredients

  • 3/4 cup whole wheat flour
  • 3/4 cup white flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 cup brown sugar
  • 2 tbsp canola oil
  • 1 egg
  • 2 tsp vanilla
  • 1 cup mashed banana
  • 1 cup oats
  • 1/2 cup goji berries
  • 1/2 cup walnuts optional

Instructions

  • Preheat oven to 350.
  • Combine flours, baking powder, baking soda, salt, cinnamon, and nutmeg in a medium bowl.
  • In a large bowl; combine brown sugar, oil, egg, vanilla, and mashed bananas, stir well.
  • Add dry ingredients into the wet ingredients and stir until everything is incorporated. Stir in oats, goji berries, and walnuts.
  • Spoon batter into muffin cups sprayed with non stick cooking spray. Bake for 30 minutes or until cooked through. Cool and enjoy!
