- 3/4 cup whole wheat flour
- 3/4 cup white flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/2 cup brown sugar
- 2 tbsp canola oil
- 1 egg
- 2 tsp vanilla
- 1 cup mashed banana
- 1 cup oats
- 1/2 cup goji berries
- 1/2 cup walnuts optional
Preheat oven to 350.
Combine flours, baking powder, baking soda, salt, cinnamon, and nutmeg in a medium bowl.
In a large bowl; combine brown sugar, oil, egg, vanilla, and mashed bananas, stir well.
Add dry ingredients into the wet ingredients and stir until everything is incorporated. Stir in oats, goji berries, and walnuts.
Spoon batter into muffin cups sprayed with non stick cooking spray. Bake for 30 minutes or until cooked through. Cool and enjoy!
