Onion, Tomato & Blue Cheese Salad

Ingredients

  • 2 medium red tomatoes cut into bite size chinks
  • 1/3 red onion thinly sliced
  • 1 clove of crushed garlic
  • 1 tbsp of olive oil
  • 2 tbsp balsamic vinegar
  • 1 tbsp of blue cheese crumbled
  • Salt and pepper to taste

Instructions

  • Toss tomatoes and onions together in a medium bowl.
  • In a small bowl combine garlic, olive oil and balsamic vinegar together and whisk. Season with salt and pepper.
  • Toss tomatoes and onions with the dressing and top with crumbled blue cheese. Enjoy!
  • Serves 2.
