Pan Seared Chicken w/ Balsamic Strawberries and Feta Cheese

You can buy your balsamic glaze at the grocery store but I prefer to make my own (super easy + saves money!).  You can learn how to make your own balsamic glaze here.

Ingredients

  • 1 heaping cup of strawberries chopped
  • 1 tbsp. balsamic glaze
  • 2 tablespoons of chopped basil
  • 1 tbsp. chopped mint
  • 1 lb. thinly slice boneless skinless chicken breast
  • 1 tbsp. olive oil
  • Salt and pepper to taste
  • 1/4 cup feta cheese crumbled

Instructions

  • In a small bowl combine the strawberries, balsamic glaze, basil and mint. Gently stir everything together and set aside While they get to know each other youre gonna get started on the chicken.
  • Heat olive oil in a large non stick saute pan over a medium high heat. Season both sides of the chicken with salt and pepper and then get them into the pan.
  • Cook the chicken for two to three minutes per side, browning up each side as it cooks. Once its done, remove the chicken and plate it up.
  • Spoon a couple of tablespoons of the balsamic strawberries each chicken breast. Top with a tbsp. of feta cheese and enjoy.
