Black Bean Mango Quinoa Salad

  • 1 cup cooked quinoa
  • 1 orange bell pepper diced
  • 1 clove crushed garlic
  • 1 cup of black beans drained and rinsed
  • 1/2 mango diced
  • Juice from one lime
  • Salt and pepper to taste


  • Combine everything in a large bowl, mix well. Serve and enjoy.
