Ingredients

  • 1 tbsp. extra virgin olive oil
  • 1 small onion chopped
  • 1 green bell pepper chopped
  • 2 carrots chopped
  • 2 stalks of celery chopped
  • 3 cloves chopped garlic
  • 1 tsp. ground cumin
  • 2 tsp. dried oregano
  • 12 ounces shredded chicken I like using a rotisserie
  • 2 small zucchini chopped
  • 1 cup frozen corn
  • 6 cups low sodium chicken broth or homemade stock
  • 1 bunch cilantro stemmed
  • 1 Serrano pepper
  • A few handfuls of baby spinach chopped
  • Salt and pepper to taste
