It seems everyone on the internet is layering Biscoff cookies into Greek yogurt—and for good reason. The Viral Japanese Cheesecake is a thick, creamy, healthy dessert that’s naturally high in protein and requires no baking. Perfect for anyone who wants to enjoy a delicious dessert (or sweet breakfast!) while staying aligned with health, weight, or fitness goals.
While Biscoff may be the viral favorite, almost any cookie or sweet biscuit works here. I love using Simple Mills Cracker Thins in Cinnamon, Chocolate, or Lemon. They’re grain-free and gluten-free, and work beautifully for this healthy dessert hack.
Using thick, creamy Greek yogurt as the base is genius because you get that creamy, cheesecake-like texture without using cream cheese, sour cream, or heavy cream. So they are light and rich!
If you haven’t tried this yet, start with the base recipe. Once you fall in love (and you will), you can easily rotate in flavors like lemon, tiramisu, chocolate, peanut butter banana, or berry.
Healthy Home Cook Tip: Use thick Greek yogurt (2% or whole milk works best) and let it chill at least 4 hours or overnight. The crackers soften and absorb moisture, creating that true “cheesecake” texture. The longer it chills, the better the sliceable, spoonable consistency gets!
Base Ingredients You’ll Need
Here are the two base ingredients you’ll need, but keep in mind you can easily customize the yogurt flavor, cookie type, or sweetness to create your own delicious variations.

- Greek yogurt: The star of the recipe. Use thick plain Greek yogurt (2% or whole milk for the creamiest texture). It’s naturally high in protein and gives that cheesecake-like richness without cream cheese.
- Sweet biscuits or crackers: These create the “crust” layers and soften as they chill. Simple Mills Cracker Thins (Cinnamon, Chocolate, or Lemon) are a great, healthier option. Any crisp cookie or sweet biscuit will work.
- Honey or maple syrup (optional): Adds a touch of sweetness if your yogurt is very tangy. Adjust to taste or omit entirely.
How to Make Japanese Yogurt Cheesecake
These no-bake yogurt cheesecakes couldn’t be easier; simply mix, layer, and chill. After a few hours in the fridge, the yogurt thickens and becomes creamy, while the cracker thins and softens into a perfectly tender, cheesecake-like texture.

Fun Flavor Variations
Once you’ve mastered the base recipe, it’s so easy to switch things up! Here are some delicious ways to change the flavor:
- Lemon Cheesecake – Stir in fresh lemon juice and zest for a bright, citrusy twist. Use lemon cracker thins, and add a drizzle of honey to balance the tang.
- Tiramisu-Inspired – Mix in cooled espresso and a touch of cocoa powder with chocolate cracker thins, then dust the top with extra cocoa for that classic coffeehouse vibe.
- Peanut Butter Banana – Blend in mashed ripe banana and peanut butter for a naturally sweet, creamy combo. Use cinnamon cookies and sprinkle with cinnamon for extra warmth.
- Chocolate Lover’s – Add unsweetened cocoa powder and chocolate cookies for a rich chocolate flavor. Drizzle melted chocolate on top for a more indulgent finish.
- Berry Bliss – Fold in mashed strawberries or raspberries with a splash of lemon juice and lemon cookies for a fresh, fruity version.

If you love a protein-forward dessert (like this one!), you may want to try my double chocolate cottage cheese mousse or my rich and fudgy cottage cheese brownies next! So easy and delicious.
