Clean Eating Strawberry Spinach Salad (Video)

OMG – talk about a brain fart (yes I said fart on a food site – I hope you didn’t just lose your appetite.) this video was was suppose to post this morning.

So sorry for the delay.

This one is perfect for your summer berries (or whatever Sumer fruit you have on hand.  really. they all work).

Strawberry Spinach Salad

If you want this salad to be dairy free and/or Paleo, be sure to leave the cheese out.

Ingredients

  • 8 oz. baby spinach
  • 1 cup sliced strawberries
  • 1/4 cup chopped pecans lightly toasted
  • 1/4 cup Gorgonzola cheese
  • 1/4 cup balsamic vinegar
  • 1/4 tsp Dijon mustard
  • 1 tbsp. raw honey
  • 1/4 cup extra virgin olive oil
  • Salt and pepper to taste

Instructions

  • Whisk together balsamic vinegar, honey, extra virgin olive oil and salt and pepper. Toss the spinach leaves and strawberries with cup of dressing.
  • Divide the spinach and berries amongst two plates and sprinkle each with 2 tbsp. pecans and 1 tbsp. cheese. Enjoy!
  • Makes 4 small salads or 2 large

    Hi Dani,
    My daughter-in-law Mindy makes this salad often & I just love it! Not sure if her dressing is the same but will definitely try yours also.
    Also wanted to thank you for the great card, pictures & sweet sentiments you sent. Really means a lot to me to have all the love, support & most of all prayers extended to me.
    Love the photos too….actually spoke w/Dad last Sunday & mentioned your card. I can’t believe how much Katie & Jachs look alike. If born closer to together they could be twins. One thing for sure they will never be able to deny being sister & brother……also think they look a lot like you at Katie’s age (the eyes have it)!

    Thanks again as I really appreciate you personally touching base. Might add I also enjoy getting your receipes too…always look forward to them.
