The last recipe I posted using Bison was my Bison Taco Bowl (holy yum!) and if you are new to Bison or want to know about some of it’s benefits or where to buy it then you might want to click over and give this post a quick read.

When it comes to a classic burger (both beef and bison) I find that the less I do, the better the burger.  Usually I’m a salt, pepper, and garlic powder kind of burger eater BUT when I read about this Umami Burger  over on White on Rice I just knew that I would have to give their secret ingredient a try!  (By the way, if you haven’t been over to Diane and Todd’s BEAUTIFUL blog I must insist you head over for a peek.  There photos alone are worth the trip!).
Umami.  Mmmmmmmm.  Umami.
Umami has been called the “5th flavor”.  It is not sweet, salty, sour, or spicy (the original four) but is best described as savory.
To me umami has a round, rich flavor that hits places in your mouth like no other … it’s got that, “other-over-there” factor going on.
So what ingredient did Diane and Todd use to create a little Umami in their burger you ask?!  Are you ready for this one?!  Fish sauce!!!!
Yep.  When added to a burger stinky, smelly fish sauce adds umami!  Who knew?
So I added a couple a teaspoons of fish sauce to my good old burger standby and I gotta tell you, these burgers were DELICIOUS!
The key when it comes to cooking bison is a nice hot grill and NOT over cooking the meat.  Bison can get tough because it is so much leaner than beef, so I would not recommend cooking them past medium.
I topped my sliders with some quick coleslaw (one of my go-to fav’s) and served them along side some Baked Garlic and Rosemary Sweet Potato Fries (recipe coming soon!).  This meal was TDF (that would be ‘to die for’ for those of you who are not up on your web lingo:)).
Now can someone please tell me… what makes a slider so much more fun than a regular burger?  Is it simply the fact that you get to eat two instead of one?  Or is it a cute factor?  I can’t decide, I need to hear your thoughts!

Slaw Topped Bison Sliders

  • 1 lb ground bison
  • 1 tsp garlic powder
  • 1 tsp kosher salt
  • 1 tsp fresh ground pepper
  • 2 tsp fish sauce
  • 8 mini whole-wheat pitas I buy the at Trader Joes
  • 1 to mato thinly sliced
  • 1 small red onion thinly sliced into rounds
  • 7 oz 1/2 a bag of pre-shredded slaw mix
  • 1 fat clove of garlic crushed
  • 1 tbsp mayo
  • 3 tbsp plain non-fat Greek yogurt
  • 1 tsp honey
  • 1/2 tsp white wine vinegar
  • Salt and pepper to taste


  • In a medium bowl combine garlic, mayo, yogurt, honey, vinegar, salt and pepper. Toss everything together and pop in the fridge while you work on your burgers.
  • Grab another big bowl and combine the ground bison with the garlic, salt, pepper and fish sauce. Once you have all the ingredients well incorporated, score the meat with your fingertips to create 8 sections (it will look like a pizza pie). Grab one section and free form into a burger patty. Do the same with the rest of the meat until you have 8 mini sliders formed (they will weigh 2oz each).
  • Pre-heat your grill over a medium high heat and let it get good and hot before you begin grilling. I always brush my grates with oil before cooking anything to ensure that nothing sticks.
  • Place burgers onto the grill for 3-4 minutes per side for a medium burger (feel free to adjust the cooking time depending on how well or rare you like your burger).
  • Layer tomato and onion on the bottom half of the pita and top with a dollop of coleslaw. Enjoy!
  • Makes 4 servings (8 mini burgers).
