Healthy and delicious pumpkin energy bites that taste just like a slice of pumpkin pie! These no-bake energy bites are easy to make with nutritious ingredients: oats, pumpkin, peanut butter, maple syrup, cinnamon, pumpkin pie spice, salt, flaxseeds, chia seeds, hemp seeds and chocolate chips. Easily vegan & gluten free for the perfect on-the-go snack or breakfast!

Looking for a healthy sweet treat that tastes like a cross between a slice of pumpkin pie and a doughy soft pumpkin cookie? Don’t worry, I’ve got the perfect solution: no-bake pumpkin energy bites. 

They’re loaded with healthy fats by way of seeds and nut butter, chewy oats, protein-packed peanut butter, warm & cozy pumpkin, pumpkin pie spice and cinnamon and naturally sweetened with maple syrup. Yum!

Pumpkin energy bites make a great grab-n-go breakfast, they’re perfect for lunchboxes and absolutely lovely alongside a cup of coffee or tea, enjoyed as a morning or afternoon snack. As an added plus, they are SUPER easy to make. Let’s get to all of the delicious details!

Ingredients in No-Bake Pumpkin Energy Bites

These pumpkin energy bites are made with simple, nourishing ingredients, taste like a pumpkin cookie with plenty of crunchy, yet doughy texture and are even studded with mini chocolate chips for a touch of indulgence. Here are the ingredients you’ll need:

  • Rolled oats – The base of these energy bites is rolled oats. Feel free to use gluten free.
  • Pumpkin puree – We’re adding 1/2 cup canned or homemade pumpkin puree for delicious warm, fall flavor.
  • Peanut butter – These bites use creamy (or crunchy), natural peanut butter that’s just peanuts or peanuts and salt. Sub with almond butter as desired.
  • Maple syrup – For a little natural sweetness we’re adding some pure maple syrup. Feel free to swap with honey, if preferred.
  • Spices – Cinnamon & pumpkin pie spice for a warm, cozy taste. 
  • Salt – Just a pinch of salt brings all of the flavors together.
  • Seeds – A combination of ground flaxseeds, chia seeds and hemp seeds (also known as hemp hearts) gives these bites a nutritious boost of protein, healthy fats and fiber.
  • Mini chocolate chips – If you want to keep this snack as nutritious as possible, use dark chocolate miniature chocolate chips. (Dark chocolate has antioxidants and other healthful properties.)

How to Make Pumpkin Energy Bites

In mere minutes, you can have these delicious energy bites ready to go for your weekly snack. Best part? There are no dates or food processors involved, so you can make these no-bake energy balls in no time.

Here’s the simple process, but for full, printable instructions, reference the recipe card at the bottom of the post.

  1. Combine all ingredients in a large bowl and mix well. You will have a thick, sticky batter.
  2. Roll about 1 tablespoon per ball in your palms. Place on a plate or baking sheet that is lined with a silicone mat or parchment paper.
  3. Transfer to the fridge for a couple of hours or freeze for about 1 hour to set and then enjoy!

Custom Energy Balls

Looking to mix up the ingredients? Here’s some simple ways to make these energy bites your own:

  • Nut butter – instead of peanut butter, feel free to use almond butter or sunflower seed butter. You can also use a natural, creamy or crunchy nut or seed butter. 
  • Vegan bites – to keep these vegan, be sure to use pure maple syrup, not honey, and also use dairy free/vegan chocolate chips.
  • Gluten-free bites – be sure to use rolled oats that are certified gluten free for naturally gluten-free energy bites.
  • Extras – feel free to leave out the chocolate chips and use another favorite add-in like raisins, dried cranberries or blueberries.

Energy balls are pretty much the perfect snack! We love to make them at the beginning of every week for a ready-to-go snack that is both healthy and delicious. Here’s some of the reasons they’re so great:

How to Store Energy Bites

In the fridge – No-bake pumpkin energy bites are great stored in an airtight container in the refrigerator for up to about 10 days.

In the freezer – You can also store these pumpkin energy balls in the freezer for up to 3 months. If they get too hard, let them sit at room temperature for 5-10 minutes before eating.

Ingredients

  • 1.5 cups old-fashioned rolled oats gluten free if preferred
  • 1/2 cup pumpkin puree
  • 1/2 cup natural peanut butter
  • 1/3 cup maple syrup
  • 1/4 teaspoon cinnamon
  • 1/2 teaspoon pumpkin pie spice
  • Pinch of kosher salt
  • 2 tablespoons ground flaxseeds
  • 2 tablespoons chia seeds
  • 2 tablespoons hemp seeds
  • 1/3 cup mini chips use dairy free if vegan

Instructions

  • Gather ingredients and line a rimmed baking sheet with parchment paper or a silpat mat and set aside.
  • Combine all of the ingredients in a large bowl and mix until well combined. You should have a nice thick, sticky batter.
  • Scoop a heaping tablespoon of the dough into the palms of your hand a roll until you have formed a small ball. Place the ball on the rimmed baking sheet and repeat until you have worked through all the dough. You will end up with about 18 energy bites.

    These are amazingly delicious! I substituted almond butter for peanut butter and coco nibs for chocolate chips. I didn’t have hemp seeds. It was so hard to stop eating them! These have a great flavor.

    Used chunky peanut butter. Rolled finished balls in fine shredded coconut and pressed each into a flattened disc shape. Delish. Thanks for your recipes.!
