Healthy Pumpkin Pancakes

Ever since sharing my Protein Pumpkin Pancakes a few years back, I have received a ton of requests for a pumpkin pancake without the eggs or the dairy.  So naturally, I wanted to find something that would work.

And after doing some research and recipe testing this recipe from The Big Man’s World was by far my favorite.

So instead of messing with a good thing, I thought it would make the most sense to share his recipe with you.

These pumpkin pancakes are thick and fluffy and have no flour, dairy or eggs!  It’s amazing how much flavor and texture you can get into such a healthy recipe with just a little creativity.

Be sure to watch the video then head on over to The Big Man’s World to print the recipe (but be warned, he has TONS of other healthy sweet treats as well, so prepare to spend some time).

    Hi Dani Spies,

    I was looking for banana bread recipes and found one on your website. Decided to make it just like the recipe said, and it was sooo tasty and full of banana flavor… tastes like a banana cake rather than bread. I want to make more desserts without lot of flour, sugar, dairy, and processed ingredients.
