Weekend meal prep has become a nonnegotiable habit in our house.
Every weekend I think about our meals for the week, do the grocery shopping and then come home and do my meal prep. It’s a process that I have really grown to love and on the occasion when I don’t do it (I know I said it was nonnegotiable but I am human) I really, really miss it!
I have found that since I began to meal prep on the weekends, my weekly eating habits have improved a ton. Like I mention in the video, I am usually very willing to eat a salad but not always so willing to make one! So having fresh cut veggies and salad jars prepped and ready to go is a game-changer for me when it comes to healthy weekday eating.
Exactly what I make every week varies a bit but this video will give you a great sense of how I prepare for the week.

Great minds! My husband wanted to go to the hardware store, and I tagged along to buy mason jars–because I want to create make-ahead salads for lunch! I love the creativity these inspire and you are so right–I’m happy to eat it, but not always happy to make it for lunch. Wish me luck–my plan for 2015 is meal prep for the week so I am surrounded by good choices. PS–I think I bought the larger mason jars, but more veggies can’t be wrong, right?

I need to make salad jars! Must add to my list this week. I’ve been chopping up lots of collard greens and kale lately for the week. A quick sautée is so easy and delish this time of year, plus I can throw it in any soup or eat as a side with most meals. I’ll even eat eggs with them for breakfast. But if I don’t wash and chop on the weekend, chances are high that I will never even take it out of the bag the whole week. Also, I’ve been making your overnight oats to have on hand for that 3pm snack when I’m ravenous and veggies won’t cut it. I add frozen cherries and sprinkle some cacao nibs on top right before eating. Yum! 🙂
Meal prep is definitely a must. I’ve been losing weight and going to gym to weight train and i need to plan my meals. It’s so helpful and definitely the reason i lost so much weight.
My staples are power balls, boiled eggs, baby sweet potatoes, veggies and chicken breast. The sweet potatoes are great as a snack to pack.
The baked oatmeal idea from you is going to be added this week as well as the salad jars.
The salad jars are definitely one of my favorites! And I love feet potatoes too. We always eat them with a little coconut oil, salt and ppere – DELISH!
To keep my prep time minimum, I shop ahead for the week; I wash and freeze spinach/kale leaves so they are ready for smoothies anytime. I make salad dressings, citrus juices, glazes, crushed garlic, while I cook a few varieties of beans, brown rice, and quinoa. Having just the building blocks of our meals stored away, helps me to stay on track. Thank you for posting your tips and techniques!

I love your in the pantry videos. This weekend I did food prep and did lots and lots of veggies and the hard boiled eggs. What a breeze it was to do lunches at 530 am!! I hope I can make this a habit. You always have such great and helpful tips. Next Mason jars!!! 🙂
Doing food prep is my savior when it comes to keeping it healthy during the week! We would eat a lot more pizza if it wasn’t for weekend food prep:)

Just a quick question, any of the veggies or greens can loose some of their properties when not eated in the moment? for example kale or carrots?

They probably lose trace amounts but for me it makes all the difference b/t having or not having them at all, so I’m willing to sacrifice a bit;)
I’m learning a lot with your videos, it’s more easy than the other videos I have watch , I have kids and I’m always running but you make it seem so easy to have control over what you eat instead of the food having control over you ( like my case☹️).
I learned that it’s ok to have those bad foods in your house because I have kids and as healthy as we want them to eat they are kids .
