While I have absolutely no idea who is playing in the Super Bowl on Sunday, I have been thinking about what game day snacks I want to make, and these Blue Cheese Stuffed Meatballs are at the to of my list.
Not only are they delicious but once you get them into the crockpot, you don’t have to do a thing. After they’re done cooking you can simply turn the crockpot to ‘warm’ and leave them in there until it’s time to eat. Because really, whats worse then being stuck in the kitchen the whole time and missing the game half-time show?
I opted for the lean ground chicken in this recipe but if you want a little more flavor and fat, be sure to buy the darker ground chicken (if you double the recipe, you can cut the difference, and go half and half).

- Collard Green + Artichoke Dip
- Chips + Salsa + Guacamole

Helpful Kitchen Tools:
Ingredients
- 1 lb. lean ground chicken
- 1 egg
- 3 tbsp whole wheat panko breadcrumbs
- 1/4 cup finely diced onion
- 1/2 tsp. onion powder
- 2 cloves crushed garlic
- 1/4 cup chopped parsley
- 2 ounces blue cheese cut into small cubes
- 3/4 cup + 1 tbsp. hot wing sauce
- 1 tsp. each salt and pepper
Instructions
- Pre-heat oven to 350.
- Line a rimmed baking sheet with a split mat and set aside.
- In a large bowl, combine; ground chicken, egg, bread crumbs, onion, onion powder, garlic, parsley, 1 tbsp. of hot sauce, salt and pepper. Use your hands to gently mix together just until everything is incorporated.
- Grab a hearty tablespoon of the mixture and roll in between the palms of your hand to form a ball. Stuff a small cube of blue cheese inside the meatball and roll a little more to seal.
- Place on baking sheet and continue until you have rolled all the balls.
- Bake in oven for ten minutes and then transfer to a crockpot. Cover with the remaining wing sauce and cook on low for 2 hours.
- Serve and enjoy!

Could I do less time in the crock pot if i put it on high? If so, how long do you suggest?

You can cook them in the oven for 20 minutes (and skip the crockpot) and they would be cooked through.

I love the idea of the flavor of these- could I leave out breadcrumbs entirely? If so would still need the egg? or anything else different. Thank you.

Sure, you can leave both out, but the consistency will definitely change.

Yes, you can definitely freeze them after they are completely cooked. I’m not sure how they would come out if you froze them after baking, but before slow cooking… it sounds like a great idea, but I haven’t tried it. Let me know if you do 😉

Yes. You can bake them, easy peasy! Make them the same as you would any other meatball.

Hi Dani, I am not a big fan of blue cheese, can i use another type of cheese without ruining a good meatball?
I also want to say that I love, love, love all of your recipes, your enthusiasm to educate and make us aware that we have to listen to our bodies need. I ran into you on youtube (after watching so many other videos, I just fell in love with you and all of your videos), I was so tired of feeling so blahhhh!!!!! On top of gaining 30lbs and adding to the 20lbs (my boyfriend always tells me “your beautiful” when i ask him if i look fat. hahaha…… so i continued to gain wt.) I’ve been wanting to lose wt. i needed a kick start. For the past month I have been playing with all of your recipes,and tasting what good clean and delicious food tastes like and not worrying so much right now about the scale and the lbs i want to lose, but just really listening to what you have said and taking it all in one day at a time. I am so enjoying going to Whole Foods, Trader Joe’s, Sprouts which are all very close to me and actually walking in and just looking at food in a different way. Guess what? I got my “umphh” back, i still have a lot to learn but i am excited to learn. I am a Registered Nurse and I know all the medical “stuff”, however the nutrition part is what I really am lacking and now that i found you and your knowledge, “you make it so easy and fun.” I am looking forward to this New Year, thank you so much.

Yay! I’m so excited for you Angie. Nothing feels worse then losing our ‘umphh’ BUT nothing is better then getting it back. So happy the recipes and videos have been helpful. As for the cheese, I think mozzarella would be a good swap:)
