Chilly fall mornings + fresh picked apples from the farm = this amazingly simple (and delicious) Apple Pie Oatmeal.
I’m a big fan of microwaved oats. It’s a very easy way to get a warm, comforting, nutritious breakfast on the table in just five minutes.
Like I mentioned when I shared my classic go-to oatmeal recipe, the secret weapon for extra delicious microwave oats is mixing some egg whites into the oats once they are halfway through cooking. Not only does this add some protein to your breakfast, (which has been proven to help us stay full longer) but it makes the oats creamy, fluffy, and extra yummy.
Just be sure to add the whites in at the halfway point. This ensures that you don’t end up with scrambled eggs in your oats.
For me, the apples and cinnamon add enough sweetness to this breakfast, but if you want a little extra sweetness in your oats, simply add in a couple teaspoons of your favorite sweetener (hint: maple syrup would be divine).
Another great way to eat this, is to skip the walnuts, and stir in a tablespoon of your favorite nut butter. Oh the options….

Ingredients
- 1/3 cup old fashioned rolled oats
- 2/3 cup water
- 1/4 cup egg whites
- 1/2 apple diced
- few dashes of cinnamon
- 1 tbsp chopped walnuts
Instructions
- Place oats and water in a microwave safe bowl. Microwave on high for 1 minute.
- Stir in egg whites. Place back in microwave for 1 minute.
- Oats should be nice and fluffy when they come out. Stir in apples and cinnamon. Transfer to a cool bowl. Top with walnuts and enjoy!

Dani – I am an oatmeal girl all the way! The apple pie version sounds fantastic. I have it most mornings and like to add the following: cinnamon and raisins before cooking – the raisins plump up really nice or I use a few cut-up dates instead – equally yummy; cut up a small banana with cinnamon before cooking – the banana cooks into it and it’s really filling. I also make a clean version of baked granola sweetened with maple syrup that I sometimes just sprinkle on top for some sweetness and crunch. So many possibilites!

Just tried these. They were pretty good, but still tasted a bit eggy to me. If it keeps me full longer, I can get used to the taste! And my dogs loved the egg yolks for breakfast, ha ha.

Tried these today with the egg whites. Tasted great! My only problem is trying to enjoy oats re-heated when I get to work. Just not the same. Any advice?

Maybe try putting all ingredients in an airtight, microwave friendly bowl, UNCOOKED and then cook once you get to work.

Dani, some of your recipes have become family favorites here. I haven’t tried cooking oatmeal in the microwave, but I will. We like our oatmeal more flaky than creamy. One of my newest favorite add-ins in a handful of blueberries and a tablespoon or two of shredded coconut. I hope you’ll try it!

Dani, any tips if I’m going to try this recipe using pre cooked steel cut oats? I made steel cut oats for the first time & I’m wondering if when I heat up a container can I add the egg whites?

I would heat the oats up 1st do they are luke warm and then stir in the whites and cook for another minute. I’m thinking that would work well.

Delicious..im wanting to keep them chewy though. What do you recommend? Instead of cooking 1minute then adding egg whites I did 20 seconds and less water but it was watery (Still yummy) maybe not precook and half the water?

I would just do less water…. are you using quick oats or rolled oats?

I LOVE this! SO tasty! Quick question… Have you tried cooking this recipe on the stove top? If so, how do you do it? Where I work has a full kitchen and there is always a line for the microwaves but never anyone at the stove.

Yes! You would add the oats, water and apple into a pot… stir and bring to a boil. Then reduce down to a simmer for about 5 minutes or until the water has been absorbed and the apples are nice and tender (be sure to stir every so often!). Then you can add in the rest of the ingredients, serve and enjoy!

I’ve been cooking my oats in unsweetened almond milk. Makes it nice and thick. Yummy! I usually add 1/2 sliced banana and a Tbsp peanut butter about halfway through cooking time. Double yummy!! Almost like a dessert.
