Video: Super Simple Broccoli Stem Soup

Broccoli Stem Soup 2

I can’t even tell you how many years I spent throwing my broccoli stems in the garbage.  I didn’t even think twice about it until I discovered how delicious the stems actually are. Come to think of it, I’m not even sure why I just assumed they were any less delish than the florets, but I digress…

I’ve gotta tell you guys… I’ve never appreciated one-pot meals (that leave me with plenty of leftovers) more than I do now that I’ve got my two little ones!

I know you Moms out there can relate (and even those of you who are Aunt, Uncles, Grandmas, Grandpas, etc. know what I’m talking about).

Kids have a way of keeping us busy (understatement of the day) and it’s our job to find very creative ways to keep them busy

Clean Eating Turkey Chili

Turkey Chili

This one is simple.

I haven’t thrown in any extra veggies or magical ‘super-foods’.

This is a straight-forward, no-frills, chili recipe that reminded me that sometimes you’ve just gotta let a classic be a classic.

It’s warm, cozy, comfort food at it’s delicious best (and it just so happens to be packed with protein and fiber to boot;)).

Kitchen Basics: Home-Made Veggie Stock

Vegetable Stock

If you’ve never attempted to make your own veggie broth I hope to use this as an opportunity to convince you to give it a try.

Once you make (and taste) your own stock, you will wonder how you could have ever settled for it’s store bought counter part.  Especially once you see how it EASY it is!

Now don’t get me wrong…

Bison Bean & Chocolate Chili

Bison Chili 2

After many years of struggling with my weight, yo-yo dieting, and having a poor body image I finally learned that “losing weight” is really about “gaining life”.

The extra weight was there to lead me to other arenas of my life that needed my attention. It was the messenger, not the problem. Losing weight wasn’t about taking in less and disappearing, but about filling myself up and nourishing the parts of myself that I had been neglecting (a work in progress, my friends!).

Guest Post: Danica’s Slow Cooker Veggie-Packed Chipotle Chili in a Pumpkin Bowl

After nearly six weeks of being out of the kitchen  and leaving you guys high and dry – I thought it was time to ask for some help!  (I may not be cooking but I’m still thinking of you guys!).

So allow me to introduce my first ever “guest post-er”…. Danica from Danica’s Daily!  Danica has successfully lost over 55 pounds on weight watchers so I think it’s fair to say that this she certainly knows a thing or two about eating clean!  And if you don’t believe me, jump over and take a look at Danica’s recipe archive (holy yum!).

Cold Beet and Fennel Soup

Call me naive but I never realized that beets kinda, sorta have a bad rap.

While I was researching different beet recipes, I came upon article after article speaking of the universal challenge people tend to have with beets.
They are too earthy.  They taste like dirt.  They are too messy to work with!

Asparagus Soup (For the Whole Family)

I admit that I have been less than consistent when it comes to making Katie “baby / toddler” foods.

It’s just that when it comes right down to it, it can be challenging enough just to get a nutritious, homemade meal on the table for Beng and I, never mind a separate meal for Katie!  But that does NOT mean that I have not been making great food for Katie because I have, but here’s the deal…

Chard and Chicken Soup

Did you know that if you finish your shower with a blast of ice-cold water in the dead of winter you will actually stay warmer through out the day?

It’s true.

Simply Spinach (frozen) Soup

I am not a big “frozen food” person.

It’s not that I have anything against frozen foods (as a matter of fact I can see how they could be a lifesaver for many) I just rarely think to use them.
