This was a recipe that I (sorta) stole from my sister.
Her recipe uses white pasta and (I kid you not) about a half a jar of mayo.
It’s delicious BUT I really wanted to clean it up a bit using ingredients that work better for me and my body-body!

It’s been a while since I’ve shared a KidBite.
It’s not because my kids don’t eat, rather that I’m not a very good multi-tasker and trying to figure out how to balance two children with everything I would like to be doing in my life without falling into the abyss of complete exhaustion is something I’m still working on.
Everyday I promise myself that I’m gonna share all of the great recipes, tips, ideas, etc. that I have about living a Clean & Delish life (family style) here on the blog, but after the mini’s are in bed and my day of ‘doing’ is over, I just can’t seem to resist the desire to allow my brain to melt into a puddle of ‘being’.
But with that being said, I just couldn’t wait to share this recipe with you guys…
Pantry-Style Linguini and Clams

Linguini with White Clam Sauce was has always been one of my favorite meals and I can say with confidence that this is one recipe that I’ve mastered.
By making some from very simple changes this classic Italian dish is easily transformed into a Clean & Delish staple.
KidBite: Whole Wheat Pasta w/ Eggplant, Mozzarella, & Tomato Sauce

When treated with a little TLC, eggplant is a very kid-friendly veggie.
It’s soft, creamy, mildly nutty and super easy for a ‘three-toothed one year’ old to mash on the top of her mouth.
Mixing it with some whole wheat pasta and tomato sauce was an easy way for me to introduce a new veggie to Katie since she absolutely adores her pasta (or as she says, DASTDA).
Pantry Puttanesca Sauce

This recipe was 100% inspired by the one and only, Miss Katie O’Cuddles (that’s her nickname around here).

Growing up, there was always a fifty-fifty shot that “macaroni” (as my parents like to call it) would be on the dinner menu.
We easily had pasta three times a week.
Spaghetti and Meatballs, Linguini and Clam Sauce, Pasta Fagioli, Cheese Raviolis, Lasagna, and Fusilli and Meat Sauce were just some of our childhood staples.
And as a mother who wants to get a simple meal on the table rather quickly, I get it. Pasta is a fast, easy, and delicious solution BUT how oh how can we ensure that that we are not sitting down to a nutritionally void meal??
