Individual Apple Crisp

Fall is in the air and what better way  to welcome this cool, brisk, colorful season than with a sweet, warm, ooey, gooey, apple crisp?!

But as we all know, too much of a good thing is simply too much, so I thought I would encourage the practice of moderation by making this crisp into individual sized portions. This way I could enjoy a little seasonal, sweet treat without over indulging (which I have been known to do when presented with warm fruit desserts!).

There doesn’t seem to be a whole lot of things one can do with rhubarb other than mixing it with something sweet, like strawberries or apples, to balance out it’s natural tartness.

I once tried to incorporate rhubarb into a lentil dish based on a recipe by Mark Bittman and am sad to report that it was a big fat flop (in defense of Mark I did stray from the recipe and take full blame for the outcome)!  So this time I wanted to travel a more familiar road with my rhubarb, something a little more tried and true.

As I was trying to think of yet another recipe I could smear my Agave Sweetened Chocolate Icing all over for Valentine’s Day, brownies popped into my brain.

I have been reading about Back Bean Brownies for some time now and was rather intrigued by the idea of using a can of black beans in a batch of brownies, so I thought, “hey… now’s my chance!”.

There’s just something fun about incorporating a nutrient rich ingredient like black beans into what would normally be nutrient-depleted, yet delicious sweet treat! Wouldn’t you agree?

Whole Wheat Blueberry Scones

Big, fat, plump, juicy blueberries have been all over the place lately, which is really no surprise considering it is berry season, but very exciting none-the-less!

The best part about seasonal produce is the price… when there is an abundant supply, there is a decrease in cost (yeah) which is why I had no problem handing a heaping cup of fresh blueberries over to these simple and tasty scones!
