Video: Spinach, Feta, & Brown Rice Pie

I love ANY meal that I can make once and eat twice (or several times for that matter), especially meals that seem to get better the second time around, like this Spinach, Feta, & Brown Rice Pie.
This recipe is similar to a frittata or a crustless quiche except, it’s heavier on the ‘fillings’ and lighter on the eggs.
Video: How-To Make Really Good Scrambled Eggs

I know that lots of people know how to make scrambled eggs but how many of you know how to make really good scrambled eggs?
I’m telling you… it’s worth knowing, because the difference between regular old scrambled eggs and really good scrambled eggs may just rock your world (it did mine)…
Video: Spanish Tortilla

This is another video that we shot nearly a year ago (when I was still pregnant with Jachs!) and are finally able to share! The only catch is that I forgot to take a photo of the final product so you’ll just have to use your imagination until I get to make this one again… enjoy!
Video: Egg “101″

*A little reminder from the archives (2009) for those of you getting ready for Easter!

In this video I cover some of the basics you might want to know about eggs and egg whites.
Broccoli and Cheese Breakfast Casserole

I have so many recipes bookmarked from so many great food blogs out there but somehow or other I always seem to fall back on Kalyn!
This Broccoli and Cheese Breakfast Casserole was inspired by a recipe I found over on Kalyn’s Kitchen. I know you guys know who Kalyn is by now…
Potato Crusted Swiss Chard Quiche w/ Goat Cheese

I think there is a fine line between “healthy eating” and “depriving yourself of foods you love”.
Video: Summer Squash Frittata

As you read the title of this post you are probably thinking, “Summer Squash at the end of October? Hmmm, a little out of season, no?”
And to this I respond….
California Scramble

I’m not a “coffee-all-day” kinda girl.
What I am is a “one-really-good-cup-of-coffee-in-the-morning” kind of girl (oh, the love I put into my morning brew!)
AND since Katie has joined the tribe, my morning cup of coffee seems to be growing larger by the week!
So what does this all have to do with my California Scramble?
Video: Egg White Scramble (in the microwave!)

I know from past experience that I am going to get a handful of “isn’t the microwave a not so ‘clean’ way of making healthy food” questions/comments on this video, so I thought I would start by addressing this point…
