Clean Eating Turkey Chili

This one is simple.
I haven’t thrown in any extra veggies or magical ‘super-foods’.
This is a straight-forward, no-frills, chili recipe that reminded me that sometimes you’ve just gotta let a classic be a classic.
It’s warm, cozy, comfort food at it’s delicious best (and it just so happens to be packed with protein and fiber to boot;)).
Warm Lentil Salad Speckled W/ Kale and Pomegranate Seeds

I believe that everything in life happens for a reason.
I have been wanting to share this Warm Lentil Salad with you guys for years (no exaggeration). It’s a recipe that I learned when I attended The New School of Cooking over 5 years ago it’s been one of my ‘no-fail-go-to-salads’ ever since.
But for whatever reason, it just never made it to the blog, and now I know why…
KidBite: Whole Grain Elbows With Lentils

It’s been a while since I’ve shared a KidBite.
It’s not because my kids don’t eat, rather that I’m not a very good multi-tasker and trying to figure out how to balance two children with everything I would like to be doing in my life without falling into the abyss of complete exhaustion is something I’m still working on.
Everyday I promise myself that I’m gonna share all of the great recipes, tips, ideas, etc. that I have about living a Clean & Delish life (family style) here on the blog, but after the mini’s are in bed and my day of ‘doing’ is over, I just can’t seem to resist the desire to allow my brain to melt into a puddle of ‘being’.
But with that being said, I just couldn’t wait to share this recipe with you guys…
Vegetarian Springtime Pesto Bowl

There are many-a-meals made in my home that never make it to the blog.
Often times it’s because I don’t have the time, desire, or patience to get a decent picture of the food (and I am a-gotta-see-it-to-wanna-eat-it-kinda-girl) but most of the time it’s because a lot of what we eat around here doesn’t seem to fit into “recipe-format”.
Take this Vegetarian Springtime Pesto Bowl as an example…
Lentil Veggie Soup w/ Collards

Other than being absolutely delicious, lentils offer a ton of nutritional benefits including lots of fiber, plenty of protein, and a good dose of folic acid (making them a great choice for us pregnant mamas).
This Lentil Veggie Soup w/ Collards recipe is one of the simplest, most flavorful lentil soups you can make and it is packed with flavor!
Easy Brown Rice and Black Beans

As much as I love to cook, the truth is that I usually only cook two (sometimes three) meals a week and the rest of the nights we eat very basic, simple meals made from ‘head start’ ingredients or leftovers.
As most of you know, my hubby and I are very dedicated to our Sunday ‘pre-preppin’ sessions…

And just like that the holidays are over… well almost at least!
We still have New Year’s around the corner and whether you are laying low (like my hubby and I) or planning to close out 2010 with a rockin’ bang, I’ve got the perfect meal to jump start your year come January 1st.
Video: Roasted Chickpeas w/ Indian Spices

If you haven’t discovered Roasted Chickpeas yet this is the perfect time of year to give them a try. They’re little, tasty, crunchy, salty, balls of goodness that are packed with protein and fiber AND they make the perfect snack for any party or gathering you might be headed to in the next couple of weeks!
Leftover Turkey and Black Bean Quesadillas

We’ve finished off almost all of our Turkey Day leftovers around here except for the turkey!
We’ve still got quite a bit of turkey to get through and since these quesadillas are a go-to staple in our home, I figured, why-not?
(My Version of) Mrs. Plaza’s – Aunt Helen’s Bean Salad

Bean Salad is the ultimate Summertime side dish when you are headed to a picnic, BBQ, or anytime of pot luck really!
