Broiled Sole With Mustard And Thyme

It’s been a while since I’ve shared a recipe just for the love of sharing a recipe!
I’ve been so focused on video production I’ve let my written recipes fall by the way side…
Video: Dandelion Greens 101

Dark leafy greens are one of the most nutritious foods we can add to our diets and I find that the more often I eat them the more often my body craves them.
I call this the ‘snowball effect’.
The ‘healthier’ my food choices = the better I feel = the more I want to make amazing, nutritious, choices like Dandelion Greens.
This my friends is why it’s always important to do things and make choices that make you FEEL good…
Video: Spinach, Feta, & Brown Rice Pie

I love ANY meal that I can make once and eat twice (or several times for that matter), especially meals that seem to get better the second time around, like this Spinach, Feta, & Brown Rice Pie.
This recipe is similar to a frittata or a crustless quiche except, it’s heavier on the ‘fillings’ and lighter on the eggs.

While I think on the whole, my body does better with less grains, brown rice does happen to be one of my faves as far as grains go.
I especially love fat, plump, and sticky short grain brown rice but don’t worry if you don’t know the difference between short grain and long because I’ve got it all covered in this video.
Video: Clean Eating Tuna Pasta Salad (To Take For Lunch)

This was a recipe that I (sorta) stole from my sister.
Her recipe uses white pasta and (I kid you not) about a half a jar of mayo.
It’s delicious BUT I really wanted to clean it up a bit using ingredients that work better for me and my body-body!
Video: How-To Make Really Good Scrambled Eggs

I know that lots of people know how to make scrambled eggs but how many of you know how to make really good scrambled eggs?
I’m telling you… it’s worth knowing, because the difference between regular old scrambled eggs and really good scrambled eggs may just rock your world (it did mine)…
Video: Super Simple Broccoli Stem Soup

I can’t even tell you how many years I spent throwing my broccoli stems in the garbage. I didn’t even think twice about it until I discovered how delicious the stems actually are. Come to think of it, I’m not even sure why I just assumed they were any less delish than the florets, but I digress…
Video: Popcorn Broccoli

Salt, pepper, olive oil and garlic. This, my friends, is a winning combination that will never let you down.
Which I why this simple combination paired with roasted broccoli is a go-to side dish in our house.
It’s quick.
It’s simple.
And yes…
Video: Artichoke 101

Yet another video that was shot last year when I was still pregnant with Jachs. What can I say, we got a little ambitious in front of the camera but lost our footing a bit with the editing… BUT why waste our time chatting about the past when here we are one year later with a finished product, right?!
I adore artichokes, and get so excited when I start them begin to pop up all around the farmers markets, but I know for many that artichokes can be rather intimidating to work with, so…
