KidBite: Kale Pesto Dipped Chicken Tenders

I’d be lying if I tried to pretend that finding yet another way to have my two-year old enjoying kale didn’t excite me.
What can I say? Watching my toddler eat and enjoy green veggies of any type makes me smile.
I’m not exactly sure why.
I think it has something to do with knowing that she is doing something good for herself… but not because she thinks it’s good for her, rather because she really likes it.
Yeah. That’s definitely part of it. I think that’s cool.
KidBite: Whole Grain Elbows With Lentils

It’s been a while since I’ve shared a KidBite.
It’s not because my kids don’t eat, rather that I’m not a very good multi-tasker and trying to figure out how to balance two children with everything I would like to be doing in my life without falling into the abyss of complete exhaustion is something I’m still working on.
Everyday I promise myself that I’m gonna share all of the great recipes, tips, ideas, etc. that I have about living a Clean & Delish life (family style) here on the blog, but after the mini’s are in bed and my day of ‘doing’ is over, I just can’t seem to resist the desire to allow my brain to melt into a puddle of ‘being’.
But with that being said, I just couldn’t wait to share this recipe with you guys…
Mango, Banana, Raspberry & Spinach Smoothie

If my daughter could drink all of her meals, she would be a happy camper. Especially if she could drink them in the in form of SMOODIES (as she would say)!
These are hands down Katie’s favorite way to ingest food and great tool for her Mommy to load her up with nutrient-dense fruits and veggies!

Spaghetti Squash with Peas and Parmesan

What can I say… I LOVE to eat, so I tend to focus on bulking my meals up with high nutrient, low calorie choices, not only to stay healthy, but because this technique allows me to eat more food.
And as delicious as pasta is, there’s no way to get around the fact that a rather small serving of pasta packs a hefty caloric punch!
But I have discovered that there are two ways around this…
Easy Brown Rice and Black Beans

As much as I love to cook, the truth is that I usually only cook two (sometimes three) meals a week and the rest of the nights we eat very basic, simple meals made from ‘head start’ ingredients or leftovers.

Roni’s Banana Oatmeal Cups

Your morning bowl of oats just got a whole lot easier thanks to my friend Roni over at GreenLiteBites.
Roni took all of the ingredients that one might put into their morning bowl of oats and created these super tasty, super convenient Banana Oatmeal Cups.
KidBite: Whole Wheat Pasta w/ Eggplant, Mozzarella, & Tomato Sauce

When treated with a little TLC, eggplant is a very kid-friendly veggie.
It’s soft, creamy, mildly nutty and super easy for a ‘three-toothed one year’ old to mash on the top of her mouth.
Mixing it with some whole wheat pasta and tomato sauce was an easy way for me to introduce a new veggie to Katie since she absolutely adores her pasta (or as she says, DASTDA).

I admit that I have been less than consistent when it comes to making Katie “baby / toddler” foods.
It’s just that when it comes right down to it, it can be challenging enough just to get a nutritious, homemade meal on the table for Beng and I, never mind a separate meal for Katie! But that does NOT mean that I have not been making great food for Katie because I have, but here’s the deal…
