A healthier version of macaroni and cheese is one of the most common recipe requests I receive BUT the problem is, I’m not really a mac + cheese kind of girl, so coming up with a recipe has never really intrigued me (I’m kind of selfish like that!).
But that doesn’t mean I haven’t been on the look out for you guys!
There was something about this recipe that caught my eye. I think it was the color and the texture, it just looks so ‘real’. Plus I’ve loved Nikki’s recipes ever since I discovered her as a finalist on season 9 of The Next Food Network Star.
She actually has a cookbook called ‘Meat on The Side‘ that I own as well. It shares lots of veggie focused recipes for everyday cooking, my kind of cooking!
But back to the mac and cheese.
I gave it a try and loved how rich and creamy it was. It really delivers that ‘comfort food effect’ most of us want when eating mac + cheese. Plus, it has a lot of flavor!
I’m telling you, no one would never know this recipe is packed with sweet potato and cauliflower.
Both of my kids ate a big bowl for dinner and I packed it in their thermos for lunch the next day and they certainly had no idea it was packed with veggies.
The only change I made to Nikki’s recipe was swapping in the brown rice pasta for traditional pasta. But you can certainly use whatever pasta you prefer.
So if you’ve been on the lookout for a ‘healthified’ version of mac + cheese, this just may be the recipe you’ve been looking for.
