Lentils have been on my 101-list for a while.
They are so simple to make and an amazing source of vegetarian protein. As a matter of fact, 1 cup of lentils has about 16 grams of protein (that’s a lot of protein!).
Many people think soup when they think lentils (myself included) but lentils are great in salads, wraps, dips, and sloppy joe’s as well.
I’ll be following this video up with some yummy ways to cook up lentils over the next week, but in the meantime, here are some of my favorite lentil recipes to get you started:
