Clean Eating Pesto & Mozzarella Turkey Burger (Video)

This weeks post comes to you from the Jersey shore.

For those of you who think “Snooki & J-Wow” are what the Jersey shore is all about I can promise you that it’s simply not the case.
Need more proof?  Take a look at the view from our back yard.

It’s peaceful, serene, and absolutely gorgeous (and the gray at the bottom of the photo is the cover for the pool… heaven).

At the least while the kids are napping that is.

And even thought these burgers are packed with Jersey Summer flavors (ie tomatoes and basil!) I actually created this recipe back in California using the leftover pesto from my How-To Make Pesto post.

What can I say, burgers are a great base for all types of flavors and ingredients and pesto is no exception so check out the video and let me know what you think.

Pesto & Mozzarella Turkey Burger

Yield: 6 servings

Prep Time: 10 minutes

Cook Time: 10 minutes

Total Time: 20 minutes

Ingredients:

  • 1.5 lbs extra lean turkey burgers
  • ½ cup of C&D pesto (or whatever pesto you’ve got!)
  • 1 cup diced cherry tomatoes
  • 6 slices mozzarella cheese
  • Kosher salt black pepper
  • Olive oil
  • 6 Sandwich thins (or whatever you like to serve your burgers on)

Directions:

Combine turkey, pesto, cherry tomatoes, salt and pepper in a large bowl.  Using your hands, combine until all the ingredient are well incorporated.

Score the meat into six fairly even sections and then free form six burgers.

Heat a grill pan over a medium high heat and lightly coat with olive oil.  Cook the burgers for 5 minutes on the first side and then flip the burgers and cook for another five minutes or until just cooked through.

*Two minutes before the burgers are done, pop the cheese on and a nice big lid (As demonstrated in the video) so the cheese melts over the burgers by the time they are dine cooking.

Place on top of your favorite burger bun with an extra dollop of pesto and enjoy!!

    These look de-lish! I love how you not that the Jersey Shore is not all Snookie and J-Wow. I was born and raised on the South Jersey shore, and my parents still live there. Enjoy your time there!

    Hi Dani

    I have been following you for a while now and really enjoy your videos. For some reason the last couple of videos have been having some audio problems. It is like the sound is chopping away and makes it a little annoying to watch.
    Just letting you know, maybe there is something wrong with your mic.

    Hi Dani, I’m so pleased to have found your website last week (came across it while looking for help with my first home-grown artichokes and found your video!!) I’ve been poring over your recipes for the last few days. Tonight I made these fantastic burgers for my family and they all loved them, the pesto and tomatoes stops the turkey from being dry just like you say and they were SO easy to make, my 14-year-old asked for them again right away and he doesn’t eat tomatoes! I don’t eat meat but look forward to trying many of the veggie recipes you have. Thank you for sharing so much of your time and skill with us, it’s great to have inspiration for more healthy recipes.
