Roni’s Banana Oatmeal Cups

Banana Oatmeal Muffins – Clean & Delicious®
Your morning bowl of oats just got a whole lot easier thanks to my friend Roni over at GreenLiteBites.
Roni took all of the ingredients that one might put into their morning bowl of oats and created these super tasty, super convenient Banana Oatmeal Cups.
Many of you may know Roni from her blog RonisWeigh where she has the uncanny ability to share her 70lb weight loss and maintenance journey in such a open, honest, and vulnerable way that anyone who has ever struggled with weight loss or body image can’t help but to relate to her.
Roni recently self-published her cookbook ‘Green Lite Bites‘ documenting some of her fave recipes from her first three years of food blogging and was kind enough to send me a copy to check out.
I knew right away which recipe I wanted to try first. I mean, who wouldn’t want to eat a bowl of oats in an on-the-go form of a muffin?!
I love this clever idea for several reasons, so allow me to share my top 5 fave’s:
1. Pre-’prepable’. You can make them ahead of time and enjoy a quick, delicious, nutritious breakfast on-the go.
2. Kid friendly. Katie ate two of them as soon as she woke up this morning (and I got to drink my coffee when I’d normally be cooking!)
3. Versatile. I stirred in cinnamon, raisins, and walnuts, Roni added mini chocolate chips, and you can add whatever stir-ins you like in your oatmeal (think apples, pumpkin, berries, pears… you get the picture).
4. Good hot OR cold. It’s nice to have the option in my opinion.
5. Freezer friendly. That’s right! Make a big bunch, pop them in the freezer and they’ll be there waiting for you when you want them.
It’s easy to understand why someone might add these to their weekly menu plan, no?

I have made a TON of these and pop them in the freezer. I usually make about 5 batches at a time, which conveniently uses up almost the entire container of Almond milk and all of my bananas, so I have no waste. Also, that way, I can use the same foil liners over and over for all five batches. I just let the muffins cool a moment and pop them out. If necessary, I respray a little PAM in the liners, and good to go. I, too, add a heaping teaspoon of cinnamon and have substituted raisins for the chocolate chips (even though I REALLY love the chocolate chips, especially when I warm them up in the microwave). Try the Chocolate Almond Milk for a change up! MMMM!
This looks and sounds so wholesome and nutritious, not to mention delicious!

I actually really LOVED these, but, you need to try her 100% WW Banana Muffins and the Italian Sausage Skewers. I made those 2 out of her book too. Next up ~ the Southwestern Turkey Burgers I think

YES! I love make ahead stuff! We alternate between Adam’s breakfast quiche made in ramekins and my apple cinnamon oats (both done the night before). These look perfect for a quick healthy bite pre or post-workout. I’m going to add some plain protein powder and flax. Thanks for the link to GreenLiteBites looks great!

Just wondered if anyone has tried to make them less carb and more protein? I think I will try to experiment with using strawberries and protein powder…..could be a monstrous disaster….will see!
Ok, I did make it with 1 cup frozen strawberries (thawed and pureed), only 1/2 banana, chocolate Soy Slender (in place of almond milk), 2 scoops chocolate protein powder and rest of recipe as is. They turned out great. Of course they are a little brown from the chocolate soy milk and chocolate protein powder. (Next time, I might even throw in some mini chocolate chips for the kids….but they loved them as is!)
My changes made 16 ‘muffins’ at 91 calories, 2g fat, 13g carbs, 2g fiber, 6g protein each.
This recipe definitely lends itself to variations….might give pumpkin, cinnamon and vanilla protein powder a try next go around!
Next time I will spray the muffin liners (like suggested)…they do tend to stick to the paper.

I absolutely love making oatmeal cups like these. The recipe I originally saw was on Sugar Free Mom and when I first tried it I put my own spin on it (using Unsweetend Almond Milk, Egg Beaters, and Lite Applesauce and Splenda instead of some of her ingredients, also shifting around some of the amounts). On top I added chopped up golden delicious apples and sprinkled it with cinnamon before baking. I keep them in the freezer until the night before and they’re perfect for on the go!
