Game-Day (or any day) Guacamole

I used to have a video post showing how I liked to make my Guacamole but it was one of the videos I lost in my big video crash!  So in the words of Snookie (from the Jersey Shore)

Waaaahhhhhh!!! (oh don’t even pretend like you haven’t seen it).


Everyone seems to have a favorite way to make Guacamole and this is by far my favorite! 

These are some simple guidelines I use to get my Guacamole just the way I like it:

1.  Garlic.  I’m a big flavor girl, SO I like big flavor guacamole.  Translation = lots of garlic!

2.  Scallions. I prefer the milder flavor of scallions over onions in my guacamole (I’m kind of contradicting my big flvor theory here BUT trust me, it works!).

3.  No tomatoes. I like to garnish with tomatoes but I never stir them in – they tend to add too much liquid.  (If you really like tomatoes in your guac, then I suggest removing the seeds first [something I do not have the patience to do!]).

4.  Cilantro.  People either love it or hate it!  I love it.

I’m gonna serve my Guacamole with some baked chips and a big pot of Spicy Veggie Chili (a recipe I’ll be sure to share if it turns out good!).

Game-Day (or any day) Guacamole

Ingredients

2 fat cloves of garlic, minced (about 1/2 tsp)

3 scallions, minced(about ¼ cup)

1/4 jalapeno, minced (more or less depending on your taste)

2 tbsp chopped cilantro

The juice from 1/2 a lime (possibly more depending on how juicy the lime)

2 avocados

A fat pinch of salt

Directions

Combine the garlic, scallions and jalapeno in a medium bowl.

Add in avocado and lime and then using the back of your fork, mash the avocado in with the rest of the ingredients until you have a nice chunky consistency.

Season with a little salt and adjust to your taste.  Enjoy!!

  1. Great pic and recipe! I used to use red onion but the last couple of batches I used shallots instead and those worked very well. Also instead of tomato I use red pepper, which I do mix in. Otherwise I think mine is the same as yours, it’s one of those recipes I’ve never written down…
