
As much as I love veggies (and I really do LOVE em’) there are a handful of them that I just don’t eat enough of!
The Rutabaga would definitely fall into the category of “Under Appreciated Vegetables” in my life (and my guess is that this may be the same for many of you as well).
I am planning to make ‘The Rutabaga’ my next ‘”101″ Video’ (which I hope to post with the new year) so we can uncover some simple facts about this root veggie together BUT in the meantime just know this:
One cup of Rutabagas contains about 65 measly calories and 15 grams of carbs followed up with a lovely 3 grams of fiber! That’s about one half the carb you will find in the same portion of a potato – a nice little bit of information for those of us who might want to keep the carb intake in check this holiday season, no?
Rutabagas do have a little edge to them, so the apple lends a welcome hint of sweetness to cut the bite. SO if you are open and willing to try something a little different on your Turkey Day (or any day for that matter), I highly recommend this yummy mash!

Rutabaga Mash (and Some Turkey Day Ideas)
Ingredients
1 medium rutabaga cut into small bite size pieces (about 2 cups)1 large apple, cut into small bite size pieces (about one cup)
2 tsp olive oil
1 tsp maple syrup
Salt and pepper to taste
Directions
Place Rutabaga in a medium pot and enough water to just cover the rutabaga. Bring to a boil and then reduce to a simmer for about ten to fifteen minutes or until rutabaga is tender.
Add apples and simmer for ten minutes longer or until the apples are nice and tender.
Pop apples and rutabaga into a food processor along with olive oil, maple syrup and salt and pepper. Blend until you have a nice smooth consistency (I like to leave mine a little chunky). Enjoy!
