Cumin Catfish W/ Orange Avocado Salsa

Definitely not the best photo I’ve ever taken BUT I promise, this meal is REALLY GOOD and REALLY EASY! (not to mention fast and cheap).

I’ve been trying to post this recipe for about three days now but with three weeks to go before baby, I’ve been in serious “nesting-mode”.  I can’t stop cleaning!!  I mean, I’ve been cleaning things that I usually avoid like the plague (you know… blinds, windows, drawers, light fixtures…) you name it, I’m cleaning it.

I did however make this meal on Tuesday night while my husband and I were watching the NBA finals (any Celtic fans out there?) and it was even better than I remember it being. 

I don’t know if you remember, but not too long ago I lost a bunch of videos and recipes on my site when I ran into a some “technical” problems. Although this was a little annoying, it’s been good because it has inspired me to re-make a lot of older recipes that I sort-of forgot about.  This is one of those recipes.

If you are not familiar with catfish it’s a thin white fish that is VERY firm.
  It would actually make a great choice for tacos or oven-frying because it is not as delicate as many other white fish options.  And according to this handy dandy Seafood Selector Pocket Guide, (that you can easily download and leave in your wallet) not only is it a tasty, economical choice BUT it is a safe and sustainable choice as well.  Yet another nutritional and taste-satisfaction win-win (you know how much I love that!).

What I personally love about this dish is the way the the smoky, spicy flavor of the cumin coated catfish is complimented by the cool, refreshing flavors in the salsa.  It really works. 

I served this meal with a quick side of brown rice but if I wasn’t being distracted by the NBA finals, I probably would have done some kind of rice and black bean combo.  Black beans would definitely be a great side for this meal.

Cumin Catfish W/ Orange Avocado Salsa

Ingredients

1 lb. catfish fillets
2 tbsp. cumin
1 avocados, diced
2 oranges, diced
1⁄2 diced red onion
1 clove minced garlic
1⁄2 minced jalapeno (cut way back on this if you don't like spicy!)
 Juice from 1⁄2 a lime
 A little olive oil
 Salt & pepper to taste

Directions

Orange & Avocado Salsa
In a small bowl, combine garlic, jalapenos, red onions, oranges and avocado. Season with salt, pepper and limejuice; stir again and set aside.

Cumin Catfish
While your pan is heating over a medium high heat, season your catfish filets with salt, pepper and cumin. Make sure your entire filet is lightly covered with the cumin.

Add two tsp of olive oil into your pan and cook your fillets for about four minutes on each side.

Once fish is fully cooked, place on your serving dish and top with a generous helping of the salsa.  Enjoy!

    That sounds amazing! I love cumin. I have never tasted Cat fish before, so I would definitely like to give this a try.

    I was just going to ask you about some of the missing links. I made your Sweet potato spaghetti a few days back and posted on the blog it was a hit. I think everyone liked the combination.My husband who is a Potato fan not sweet potato, love the dish.

    I buy catfish quite frequently because it is a relatively inexpensive fish and because, as you mention, its relatively firm. I struggle with finding ways to add flavor to it, as its pretty bland, so I will definitely try this the next time I buy catfish.

    Curious – I love catfish and fix it in many different ways. I have cut back on buying it because of all the controversy on farm raised fish. Do you have some news on catfish that makes it a safe choice?

    Joey – Like yourself, I try to eat any “non-wild fish” in serious moderation. And although catfish is farmed raised according to “The Monteray Bay Aquarium (link listed in this post) it is one of the “best choices”.
