
As the days begin to grow longer and the temperatures warm up I know it’s time to start cooking on the grill!
Throwing dinner on the grill is one of the easiest ways to make a QUICK clean, simple, and d’lishes meal!
Cooking on the grill is especially easy for me because I very rarely do the grilling! The grill is the one cooking method my husband always seems to take the reigns with (what is it with guys and the grill, anyway?). I do however, decide what we are grilling and usually do most of the prep work (which is fine by me because in my opinion picking recipes and combining flavors is the fun part!).
This is the recipe I mentioned in my last post. Having the frozen herbs on hand was really helpful considering I didn’t really think ahead of time so I hadn’t marinated the chicken and didn’t have much of a game plan.
All that I did was lightly coat each chicken breast with a little bit of oil before patting on some of the frozen herbs. I couldn’t resist adding a sprinkle of garlic powder (LOVE garlic) and of course a little salt and pepper (these guys don’t get enough credit sometimes!). Two minutes later they were in the hands of my husband and on the grill. Pretty easy, huh?!
If you didn’t have the frozen herbs on hand you could certainly chop up some fresh ones or turn to your pantry for some dried herbs. Either way, you’ll have yourself a pretty quick and tasty meal:).
I served this with a big Caesar Salad (CS&D style, of course) which I will be posting in the near future.
In the meantime, I’m rolling into my 36th week of pregnancy and can’t believe I only have about four more weeks to go. This is going to be really cool!!
Simple Herbed-Grilled Chicken
Ingredients
1 lb boneless skinless chicken breasts2 tbsp Daregal fresh, frozen herbs - Grilling Blend (thyme, rosemary, savory, parsley)
1 tsp garlic powder
Salt and pepper to taste
Directions
Pre-heat grill over a medium high heat.Season each side of the chicken breasts with herb blend, garlic powder, salt and pepper.
Grill seven minutes on first side then flip and grill for another five minutes or until chicken is cooked through.
Enjoy!!

Excellent recipe…i always missed olive oil when grilling!:( Would leaving the chicken to marinate with herbs for a few hours make a difference?Whilst wishing you all the very best for these last 4weeks, i also thank you for reading this comment

Maria – I personally don’t think that leaving the chicken to marinate with the herbs would make much difference and that’s simply because there is nothing actually penetrating the chicken (ie. liquids or fats) the herbs just lay on the surface.
Anyone out there have a different opinion on this? I’d love your insight!
