Curry Coated Tilapia

Here is the fish that I served with my Napa Cabbage and Watercress Salad last week. 

I really liked the combination because while the fish was warm and spicy the salad was cool and crunchy!

I have really fallen in love with curry powder over the last few months. It is such a simple wasy to add a lot of flavor to a variety of different dishes! I mean all I did to the fish was rub the curry powder and some salt and cayenne pepper right onto it before cooking it up… SO EASY and SO GOOD!

Anyhow, I’m in a bit of a hurry today…but I wanted to post this before I forgot!! Enjoy!!

 

Curry Coated Tilapia

Yield: Serves 2

Ingredients:

  • 2 6 oz tilapia filets
  • 1 tbsp of curry powder
  • A pinch of cayenne pepper
  • A couple pinches of salt
  • Cooking spray

Directions:

In a small bowl combine curry, cayenne and salt.

Spray each fillet with a light coating of cooking spray and then sprinkle with curry mixture.  Use your fingers to rub the spices into the fish (do this on both sides).

Heat a medium non-stick sauté pan over a medium high heat and coat with cooking spray.
Cook tilapia about 2-3 minutes on each side or until just cooked through… Enjoy!

    I love Tilapia! I don’t use store-bought curry powder much as I feel the colour is usually way too yellow and flavour kind of lacking. This this spice blend for a quick home-made version: equal amounts of coriander and cumin powder with a pinch of turmeric and some garlic salt and cayenne pepper to taste. A squeeze of lemon in the end would bring out the flavour and add a lovely tang.

    This looks delicious, could´ve used the curry idea yesterday when I made some fish with salad. But I´m sure it won´t be long until I´ll have some fish.
