Cilantro Slaw

Certainly I can’t do a cabbage month and not post any slaw recipes!!

Now if you think you don’t like coleslaw, stay tuned… because there are so many different ways of making it you just might bump into an idea that turns you on!

My cilantro slaw is one of my favorite variations. I don’t know if I ever told you guys, but I really LOVE mayo. I don’t think I need to tell you that mayo isn’t exactly a "nutritious" ingredient…I mean your never gonna see it as my food focus or anything, but like I’ve said before, "There is room for everything in a healthy kitchen"! The key is finding ways to work the less nutritious foods into our kitchens in moderation.

So here’s what I do: instead of using all mayo I use mostly fat free yogurt to create the creamy base of the slaw and then to that I add just two tablespoons of light mayo… I find the yogurt without any mayo just doesn’t cut it, but combining the two gives me exactly what I’m looking for without adding a ton of unnecessary fat.

I find that with a lot of higher fat ingredients, like mayo or butter, you can cut way back on the quantity without sacrificing flavor because these ingredients are so rich, you’ll find that a little goes a long way!

I served this slaw with some Mexican style grilled chicken and veggies (which I did not photograph). It was definitely a winning combination!

Cilantro Slaw

Ingredients

6 cups of green cabbage, shredded
2 cups of red cabbage, shredded
½ red onion, thinly sliced
1/3 cup cilantro, chopped
¼ cup of plain yogurt
2 tbsp of lite mayo
¼ cup of fresh lime juice
2 cloves of crushed garlic
Salt and pepper to taste

Directions

Toss cabbage, onions, and cilantro in a large bowl.  In a small bowl combine yogurt, lime juice, mayo, and garlic.  Stir together.

Pour yogurt mixture over cabbage and season with salt and pepper.  Combine everything together and enjoy!!

    MizFit – I have the opposite problem… I love the stuff;) ANYHOW… I would say skipping it and adding more yogurt would be fine. I might give it a splash of red wine vinegar just to give it that little extra tang that the mayo tends to lend… let me know how it works!

    I also have switched fro mayo to grapeseed mayo from vegenaise! It’s the best tasting mayo I’ve ever had! And the grapeseed oil is proven to lower bad cholesterol and raise good. Can’t wait to try this.
