Cabbage with Dill and Peas

So, here we go… cabbage recipe numero uno!  This side dish is a very quick and simple one to make. 

Cabbage loves dill so I decided to pick up some dill when I was at the grocery store this week and let me tell ya, I’m happy I did because it really brought this dish to life.

I added the peas as a split second decision right at the end, because I was looking for a little extra texture…they did the job.

I served this side dish with a super simple baked salmon that I topped with dill as well (I’m gonna post that recipe soon) which made for a super simple weeknight meal. My husband and I try to eat in on most week nights, and with meals like this it is a breeze.

I don’t know about you guys, but for me it’s not so much the cooking that I find to be a challenge as it is coming up with fresh and flavorful ideas. i mean don’t get me wrong, the ideas are endless but sometimes in the moment, my mind goes blank. This is when I find it best to stick to the basics (veggies, lean proteins, slow carbs) and keep it simple (just a handful of ingredients)… honestly, this formula never lets me down!

Cabbage with Dill and Peas

Ingredients

1 tbsp of Earth Balance (a butter substitute)
1 small onion, cut into half moons
1 small head (about 8 cups) of cabbage, shredded
1 cup of frozen peas, defrosted
¼ cup of dill
Salt and pepper

Directions

Heat a large saute pan over medium heat and add earth balance (or butter).  Once melted, stir in onions and a pinch of salt.  Allow to cook for about four to five minutes, stirring occassionally.

Once the onions are translucent, stir in cabbage and a nother pinch of salt.  Stir well being sure to combine the onions and the cabbage together.  Allow to cook about six to eight minutes before adding the peas.

Once the peas are mixed in, cook for another five to eight minutes.  You want the peas to be cooked through and the cabbage to be wilted and even a little browned in some spots.

Turn off the heat and stir in the dill.  Give it a taste.  More salt?  A little pepper?  You decide!!  Enjoy.

    This doesn’t really have anything to do with your post, other than you mentioned you liked dinners that combined lean protein, slow carbs and veggies….well have I got a recipe for you to try! My friend made it for me this past weekend. It is salmon fillets wrapped in prosciutto served over top of lemon-herb lentils…yummy!     I love cabbage. :o ) I’m glad you are featuring it this month.

    Lately, I’ve been using it as a filler for meals so that it looks like I have a huge portion (volumetrics) :o ). For example, I made ground beef tacos and I added to the meat shredded cabbage (and bell pepper and onion and squash) but still served them up like tacos with tortillas (lettuce wraps for myself) and they were soooo filling and good.

    I also love cabbage with stirfry chicken and cilantro. YUM.
